Adelardus abbey beer is the youngest descendant of our beers. This dark brown beer was made for the open house days of the abbey. Adelardus was one of the most important abbots for the abbey of Trudo and the city Sint-Truiden. He built the tower and rebuilded the existing church into one of the most monumental churches of that time. The ingredients are: brewing liqour, malt, yeast, hop, candy and ‘sweet gale’. ‘Sweet gale’ is a mixture of ten spices from the region, which gives the beer his typical flavour. The alcohol content of this abbey beer is 7 % vol.alc.

The beer after its checking out of the 330ml brown bottle pours a foggy yellow-orange color with a modest bright white head that vanishes rather quickly, the texture creamy and the lace forms a glutinous sheet that sticks to the glass. Nose is tart with a hint of yeast and a nice malt tone at the back, crisp and fresh to the senses, start is sweet and the malt pleasant with the top light. Finish is ferine in its acidity, the hops spicy and the aftertaste sour and quite dry, a drinkable beer.

Head is initially average sized, frothy, light brown, mostly lasting. Body is hazy medium brown, dense tiny particles, bottle conditioned. Aroma is moderately malty (caramel, nutty, toasted bread), lightly yeasty (cobwebs), with notes of plum, clove, and toffee. Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, lightly acidic, moderately bitter. Medium body, velvety texture, lively carbonation, lightly alcoholic. Complex and enticing aroma, very good flavor balance (just a tad too yeasty), rich mouthfeel, and well-hidden alcohol. Superb.

The beer after its extraction from the 330ml stubby brown bottle sets in the glass a muzzy orange color with a Bunyanesque creamy light tan head, as it, slowly dissintagrates the lace forms a thick blanket to obfuscate the glass. Nose is over ripe fruit, lots of malt, fresh and crisp to the senses, start is ambrosial with a decent malt presence, the top light to moderate in feel. Finish is authoritarian in its acidity, the hops spicy and pleasing to the palate, quite dry and some somewhat tart aftertaste a nice drinking beer has a nice bit of tummy warming.

Josh's translation of the french description..."Aged in the caves of Kanne, where the exceptional climatic circumstances give it a unique aroma and flavour without equal." In the U.S., the label will read "Grotten Brown Belgian Cave-Aged Ale."
Bottle pours a red brown, fairly dark, but fairly clear. The head was average leaving very little lace. The aroma was quite sweet, malty, light dark fruits, and deceptive. I say deceptive due to the flavor seeming much drier than the aroma. The flavor has a heavy malt backbone, but a quick dry finish with some hops that show through. There is a lingering sweetness, but only minor. The palate is nice and cleansing and works well with the dry side of the profile.

The Bear’s beer
A high fermentation beer, with 8,4% alcohol content, bottled in 75, 33 cl unfiltered, non-pasteurized and re-fermented in the bottle.

Brewed as the other beers of the brewery by brewing in a mash tun heated up by direct fire, the originality of this beer comes from the honey incorporated before the main fermentation. This honey brings sweetness and fragances but also an important amount of alcohol by fermentation of the sugar that it contains. Its froth is not abuntant and ephemeral as all the beers rich on alcohol. It’s a tasteful beer to enjoy and as well very good for a lot of culinary preparations.

OMER. traditional blond is made of excellent summer malted barley from the Loire region (France) and pure water. During the brewing process sugars are liberated that will serve later to nourish the yeast. During the cooking process 3 varieties of hops from Germany, Slovenia and the Czech Republic are added to give the beer the specific aroma and bitterness.

After this cooking the top-fermenting yeast is added. The top fermentation process lasts 4-5 days at about 20°C. This yeast gives the beer its fruity and full-flavoured character.
After this main fermentation the beer is lagered for 3 weeks at 0°C.
Then the beer is filtered. Fresh yeast and sugar are again added to engine the refermentation after the beer is being bottled. This refermentation goes on for 14 days at a high temperature of 25°C. Here the sugars are transformed into alcohol and carbon dioxide. They give the beer the nice head while pooring. Finally the beer needs to rest for 3 weeks.

Tastes stronger than its advertised 7% as its alcohol bite lingers on. The whole flavor experience stops just short of a toasted quality that I remember encountered and have enjoyed before and really want from this drink.

This Chouffe was dying to get out of the bottle. The head is full and strong and maintains its presence throughout. It has a fine lace that clings to the glass, and an amber/golden color. La Chouffe has a great combination of effervescence and creaminess that adds an interesting character to the mouth feel and the taste. The smell is earthy and fruity with a hint of apples and pears. Taste is a complex and somewhat subtle mix of sweet and bitter that makes it very drinkable and not overwhelming. I have had in on tap and from the bottle and have never been disappointed.

red-brown beer with a huge beige lazing head. The aroma is sweet caramel with notes of coriander. The flavor is of alcohol, caramel, and prunes with lemon-soda in the background and a dry finish. The mouthfeel is very soft.
Nose is loaded with the aroma of over ripe fruit, plums comes to mind, sweet malt and a molasses like tone with some peat and smoke a complex nose to say the least, the start is sweet and thick with malt the top is middling in its feel. Finish is stinging in its acidity, the hops pertinent to the style and the 9 percent ABV, leaves a nice warming sensation in the tummy, quite dry aftertaste that sticks to the palate, a most enjoyable beer.

Origin: This 15-year-old amber coloured high fermentation beer has collected a nice piece of history. Originally brewed by order of a couple of Ostend beer lovers; it had to become a typical Ostend beer and therefore, Redgy Van Troost, a famous Ostend artist, was contacted for the label design. He created an atmospheric image of Ostend showing the casino building and the statue “The see” of sculptor Graer. And so, the beer name was discovered: 'Dikke Mathile' is the popular name of this statue. Owing to certain circumstances, we have changed, at request of the relatives of Graer, the label into a sculpture of the grandson of C. Permeke. Ingredients: Munich malt and amber malt, hop, water. Characteristics:  6% alcohol, serve fresh Amber coloured through the use of Munich malt and amber malt. Hopped till 32 EBU with 50% hop of Poperinge and 50% German Hallertau flavour hop. The main fermentation at 22° Celsius is finished after circa five days.  Storage in bright beer tanks at -2° Celsius during 6 weeks .

The bottle after its debarkation from the 330ml brown bottle sets in the glass a translucent copper color with a behemothic light tan and creamy head and after its demise the lace forms a thin satin sheet to lie upon the glass. Nose is tart but yet fruity sweet, citrus like in its crispness, fresh and appealing to both the ocular and olfactory senses, start is sweet with a pleasing malt profile, the top is light to middling in its feel to the palate. Finnish is striking in its acidity, the hops joyful in their spicy presence, desert dry almost vinous aftertaste that lingers long on the palate.

Very much in the tradition of old Flemish brown beers, its first taste however is less aggressive. Despite its Lambic base, it is sweet and well-rounded, and very pleasant. That explains how it is drunk readily and without its taste becoming wearisome.

Poured a dark, almost ruby, type of brew with a nice bubbly head with good retention. Aroma of malt and spice is quite interesting with some floral aspect to it. Carbonation is good with just above average body. Mix of spice is quite interesting and most resemble Duvel, or a darker Duvel. Never tasted the original beer that was brewed before Boon took over but I still like this one. Many Thanks for my friend traveling in Belgian for bringing this back. Also, beautiful bottle that seems like it was used 100 years ago for the first time.

Monster head even after sitting for a while.Apicot color really murky streaming fillzles dancing up thru’ the haze.Insane fragrance of exotic fruits and yeast.Then maybe it comes on to a spiced tea aroma that makes it hard to stop sniffing.Will it taste this good??Almost,it is so carbonated that ,IMHO, it takes away from some of the flavor.Lots of teast but that spiced fruit flavor does poke it’s head out as does the alcohol.less carbonation would have made this more enjoyable.
Good triple, typical beer of the 'Dolle Brouwers'. Bitter in the beginning, sweeter later on.

Biere de Miel is bottle conditioned and contains only water, barley and wheat, honey, hops and yeast. It has a marvelously delicate scent of honey, balnaced by a dry palate, resulting in a beer that is both estery and refreshing.
A biggish, cream-white, fine, foamy head collapses unevenly. The beer is mostly clear and orangey-gold. Nose is spicy, dusty, medicinal. It smells like those wax lips or wax harmonicas you used to eat. Some nice pepper and floral notes in the front, but bandaids and rubbing alcohol, too. Turns sweet and waxy. There's some sugar, too. But it's a little thin. A tangy, citrus finish is marred by an alcoholy sourness.

I love the taste of this beer. It’s sweet, but in a very subtle way, fruity, yeasty, malty, and finishes spicy and dry with just a touch of alcohol. This beer has character without being excessive in any way. Always a good choice.
