Abbaye des Rocs (9% alcohol vol.) is a pure malt beer, with no added sugar. The entire range of tastes is directly linked to the double fermentation, the precise quantities of malts (7 types) as well as the mixtures of three kinds of hops (Belgian, German and Czech). Its colour is a striking deep and majestic red. Its taste is rich and full of subtlety. It is tasted like a red wine with which it shares the ruby colour without having the tannin. It develops a strong sweet smell. It confirms the initial impression in the first mouthful, with a sharp body that is balanced with a certain fruitiness. It frees itself on the palate and develops an impressive depth of taste. Some traces of burnt wood are detectable, but never scorched even if it contains this kind of malt. The foretaste is very prolonged because of its rich and unctuous development throughout the mouth. The bitter and sugar tendencies (even though there is no sugar in its composition) compete and come back together to the taster's great satisfaction. It is a deep, mystic and extremely mature beer to be classed among the great products of our soil.

This is an unfiltered organic Belgian ale from this well-respected artisan brewery, better known for their classic Saison. It has a lumpy, rocky head and a pleasing pale golden colour. The nose is a complex blend of spices and fruit - coriander, cinnamon, vanilla, pepper, figs, and a hint of toffee. In the mouth there are lots of phenols and esters adding lightness to the texture, with complex spicy malt and a subtle burning strength in the back of the throat. However, the strength is well disguised on the tongue - it is smooth and not too lively (despite the 'pop' when pulling the cork). Aftertaste is long, zesty, malty and spicy. This is far and away the most interesting organic beer we have so far reviewed (as of 5 November 1998) - well deserving of its World Beer Championships Top 10 award (even if this isn't as prestigious as it sounds).

This beer poured a very cloudy dark brown with some sediment present. It formed a nice off white bubbly head that left circular lace. Some carbonation is present. An aroma of malt, caramel and a touch of cherry. A flavor of malt and caramel. The finish was a touch astrigent with a bit of sweetness to it. Overall I am not as big on dubbels as other styles of Belgians. But all in all, this is another nice beer from this brewer.

Adelardus abbey beer is the youngest descendant of our beers. This dark brown beer was made for the open house days of the abbey. Adelardus was one of the most important abbots for the abbey of Trudo and the city Sint-Truiden. He built the tower and rebuilded the existing church into one of the most monumental churches of that time. The ingredients are: brewing liqour, malt, yeast, hop, candy and ‘sweet gale’. ‘Sweet gale’ is a mixture of ten spices from the region, which gives the beer his typical flavour. Beer pours gorgeous mahogeny with a nice thick tan colored head that mostly dissipates. Aroma is rich with malt and dark dried fruits, i.e. figs and raisins, also light yeastiness and spices. The beer after its checking out of the 330ml brown bottle pours a foggy yellow-orange color with a modest bright white head that vanishes rather quickly, the texture creamy and the lace forms a glutinous sheet that sticks to the glass. Nose is tart with a hint of yeast and a nice malt tone at the back, crisp and fresh to the senses, start is sweet and the malt pleasant with the top light. Finish is ferine in its acidity, the hops spicy and the aftertaste sour and quite dry, a drinkable beer.

Head is initially average sized, frothy, light brown, mostly lasting. Body is hazy medium brown, dense tiny particles, bottle conditioned. Aroma is moderately malty (caramel, nutty, toasted bread), lightly yeasty (cobwebs), with notes of plum, clove, and toffee. Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, lightly acidic, moderately bitter. Medium body, velvety texture, lively carbonation, lightly alcoholic. Complex and enticing aroma, very good flavor balance (just a tad too yeasty), rich mouthfeel, and well-hidden alcohol. Superb.

Nose is over ripe fruit, lots of malt, fresh and crisp to the senses, start is ambrosial with a decent malt presence, the top light to moderate in feel. Finish is authoritarian in its acidity, the hops spicy and pleasing to the palate, quite dry and some somewhat tart aftertaste a nice drinking beer has a nice bit of tummy warming.
