The beer sets a nebulous lemon yellow it a modest sized head that is bright white in color and creamy in texture, and the resultant lace a thin sheet to obscure the glass. Honey is used for this beer, but it is not sweet. It is in fact rather bitter, but balanced. Very good with meat I found. The name "Barbarian", I guess, is supposed to refer to ancient warrior drinks (mead ?). The label calls it "the waarior’s rest" .

Baptized in the beginning “Ouden Tripel” this beer brown traditional of Flanders-Western found a new dash under its current name, Brune of Bellegem, a typically regional beer. The Master-brewer uses barley malt, wheat, hop, water and malt caramel to manufacture a beer of low fermentation. This one is then cut with lambic (beer of spontaneous fermentation) 18 months matured out of barrels of oak to give rise to this brown typical of South of theWestern one. Its taste is characterized by a balanced acidity which one hardly perceives. Very quickly, the papillae make one second pleasant discovery: a delicate bitterness followed by a suspicion the marrowy one.

Josh's translation of the french description..."Aged in the caves of Kanne, where the exceptional climatic circumstances give it a unique aroma and flavour without equal." In the U.S., the label will read "Grotten Brown Belgian Cave-Aged Ale."
Bottle pours a red brown, fairly dark, but fairly clear. The head was average leaving very little lace. The aroma was quite sweet, malty, light dark fruits, and deceptive. I say deceptive due to the flavor seeming much drier than the aroma. The flavor has a heavy malt backbone, but a quick dry finish with some hops that show through. There is a lingering sweetness, but only minor. The palate is nice and cleansing and works well with the dry side of the profile.

The Bear’s beer
A high fermentation beer, with 8,4% alcohol content, bottled in 75, 33 cl unfiltered, non-pasteurized and re-fermented in the bottle.

Brewed as the other beers of the brewery by brewing in a mash tun heated up by direct fire, the originality of this beer comes from the honey incorporated before the main fermentation. This honey brings sweetness and fragances but also an important amount of alcohol by fermentation of the sugar that it contains. Its froth is not abuntant and ephemeral as all the beers rich on alcohol. It’s a tasteful beer to enjoy and as well very good for a lot of culinary preparations.

Blanche des Honnelles (1991) was originally very localised, and has since expanded beyond the boundries of the greater and lesser Honnelle rivers, from which it takes it's name. The Blanche des Honnelles leaves the beaten path somewhat. It has an amber colour which is after all the traditional appearance of the Blanches. It is also stronger (6%) than the Blanches that we know. Its taste is surprising and is not comparable to the brews with the same name that are now on the market. If the bouquet is subdued its first flavour is a stark dry sharpness against a pepper background. There is no acidity in this Blanche that is made with three cereals (barley, wheat, oats). It has a stimulating taste, leaving a subdued but refreshing final impression. Lots of character and curious.

OMER. traditional blond is made of excellent summer malted barley from the Loire region (France) and pure water. During the brewing process sugars are liberated that will serve later to nourish the yeast. During the cooking process 3 varieties of hops from Germany, Slovenia and the Czech Republic are added to give the beer the specific aroma and bitterness.

After this cooking the top-fermenting yeast is added. The top fermentation process lasts 4-5 days at about 20°C. This yeast gives the beer its fruity and full-flavoured character.
After this main fermentation the beer is lagered for 3 weeks at 0°C.
Then the beer is filtered. Fresh yeast and sugar are again added to engine the refermentation after the beer is being bottled. This refermentation goes on for 14 days at a high temperature of 25°C. Here the sugars are transformed into alcohol and carbon dioxide. They give the beer the nice head while pooring. Finally the beer needs to rest for 3 weeks.

This beer has the color of tarnished copper and very little head. What little head there was disappears almost immediately. The nose is quite stunning. Rich earth, musty peaches, lemony oak, anise and fresh apples. The palate is dry with baked apples, old oak, stale bread and musty lemons. The finish is dry and ends abruptly, but is strangely appetizing and refreshing.

The Bush de Nuits is basically a Bush de Noël which has been matured for more than 6 months in oak barrels previously used to hold the famous Nuits Saint Georges wine, instead of being traditionally kept in storage tanks. The beer is then filled in 75 cl bottles which are placed in a hot room during 3 weeks for a third fermentation. The final result is simply amazing, a highly flavoursome beer with wine-like aromas of red fruits giving it an harmonious balance in the mouth with sweetness, a hint of acidity and a relatively dry aftertaste in spite of the high density of the beer.
