How do I fry French fries?
First and foremost, the choice of potato can be determining for the success of the Belgian fries. Best to use are frying potatoes, which are recognizable by their size and hardness. Then you have to peel the potatoes and wash them thoroughly. Important is that you have to dry the washed potatoes with a dry and clean kitchen towel. Now you can slice the potatoes into strips.
Frying fresh Belgian fries in 2 steps :
1 Pre frying (Here the Belgian fries get done) Set the deep fryer on 150°C-170°C (depending on the season and the type of potatoes) and let the frying fat warm up, then fry the Belgian fries for about 5 minutes (depending on the thickness of your Belgian fries). Lift out the basket from the deep fryer and let the Belgian fries cool down for a few minutes in the basket or in a bowl.
2 Boiling down (Which makes the Belgian fries nice golden brown and crunchy) Heat up the frying fat to 190° C and fry the Belgian fries for a second time, about 3 minutes (depending on how brown you like them) and put them in a bowl with kitchen paper on the bottom.
